Capriole Goat Cheeses

It’s officially spring so we’re highlighting one of our favorite fresh goat cheese producers, Capriole Goat Cheese! Capriole has been crafting goat cheese by hand in Greenville, Indiana since 1988. Judy Schad and her husband Larry purchased an 1850s farm and have since built a small creamery on the farm where they focus on cheesemaking, quality, and consistency. Check out some of our favorite springtime cheeses from this standout family farm:

🧈 Sofia | Sofia is sweet and dense and represents everything you’ve ever wanted from a ripened goat cheese. She has a light, delicate paté which becomes denser and creamier for 5-7 weeks from production.

🌰 O'Banon | Wrapped up like a gift in bourbon-soaked chestnut leaves, O’Banon is a fresh goat cheese that has a bright, tart-fruit flavor balanced by an underlying sweetness and mild tannic note.

🌸 Tea Rose | Tea Rose is a breath of Spring. With its fresh, bright curd, its
dusting of fennel pollen, and its shower of herbs and aromatic flower petals, Tea Rose the cheese honors the optimism and renewal of Spring. As the name implies, this chevre invites some floral and herbaceous pairings.

🐐 Fresh Chevre | This fresh hand ladled goat cheese is refreshing and bright as-is or when used as an ingredient. While the taste is totally unique, its other special attribute is texture.

🌼 Julianna | Aged 4 - 8 months, this petite cheese is buttery and smooth with a nutty and firm texture. In her latest incarnation, Julianna’s mushroomy rind is punctuated by Herbes de Provence, calendula petals, and safflower petals.

🌶️ Piper's Pyramid | Carefully hand-ladled into individual molds, Piper has a lovely light, cloudlike texture that gets denser and butterier with age. Laced with just a touch of smoked paprika, this cheese has a thick cream line and a fudgy paste.

🍄 Old Kentucky Tomme | Buttery and rich with mild cellar and white mushroom overtones, Old Kentucky Tomme has a smooth paste and bloomy natural rind when young.
